摘  要:在广西、山西农民和浙江渔民共705人中进行了连续三天的膳食调查,同时进行了病史询问和体格检查(包括血压测量)。结果发现,山西人群血压水平最高,其膳食结构的特点是高钠、低钙、低动物蛋白质;浙江人群血压水平最低,膳食结构的特点是高钠,高动物蛋白质摄入。多元回归分析结果显示:(1)根据钙的摄入量分为高钙组和低钙组,在低钙组中,个体的收缩压与钠/及钠/钾比值显著正相关;(2)个体动物蛋白质的摄入量,在调整了年龄、性别、体重指数、心率、饮酒精量、钠的摄入量及其它地区间整异等因素后,仍与血压呈显著性的负关联,提示动物蛋白质对血压具有保护作用。An epidemiological study on dietary factors and blood pressure (BP) was performed in 3 groups of middle aged men and women from Shanxi farmers, Guangxi farmers and Zhejiang fishermen. 705 subjects aged 40~59 years were examined using standardized methods including BP measurements and three 24-hour dietary recall interviews. Besults showed that mean SBP and DBP of Shanxi group was the highest, with very low intake of animal protein and Ca and higher intake of Na;the BP of Guangxi group was lower, with higher intake of animal protein and the lowest intake of Na; that of Zhejiang fishermen group was the lowest, with higher intake of fish protein and Na. Results of multiple linear regressions showed: (1) Among individuals with lower Ca intake(classified as higher or lower than the median of Ca/kcal) the dietary Na/Cal and Na/K was significantly positively associated with systolic blood pressure(adjusted for age, sex, BMI, heart rate, intake of alcohol, animal protein and the dummy variables of group). (2) The individual intake of animal protein was significantly inversely associated with both systolic and diastolic blood pressure after adjusting for age, sex, BMI, heart rate, intake of electrolytes, alcohol and dummy variables. These suggest that reducing salt intake, increasing animal protein and Ca intake in Chinese diet might he protective against hypertension.
