摘 要:以"Grande"绿芦笋为研究对象,采用空气包装、100%O2、80%O2+20%CO2、60%O2+20%CO2+20%N2这4种气调包装(Modified-atmosphere packaging,MAP)方式贮藏绿芦笋,定期测定过氧化物酶(Peroxidase,POD)活性,同时采用QRT-PCR技术测定POD基因相对表达水平,探讨高氧MAP对POD活性及其基因相对表达水平的影响。结果显示,贮藏30 d,经80%O2+20%CO2MAP后的绿芦笋POD活性,低于空气MAP(P<0.05),POD基因相对表达水平始终低于空气MAP,在贮藏12~24 d时,二者差异有统计学意义(P<0.05)。因此高氧MAP可有效降低绿芦笋POD活性和抑制基因表达,为进一步研究气调保鲜机制和产业化应用提供了理论支持。Taking‘Grande’green Asparagus(Asparagus officinalis L.)as the research object and air packaging as the control,green Asparagus was stored by modified-atmosphere packaging(MAP)in 100%O2,80%O2+20%CO2,60%O2+20%CO2+20%N2.The peroxidase(POD)activity was determined periodically.The relative expression level of POD gene was determined by QRT-PCR.The effect of high concentration oxygen MAP on POD activity and relative gene expression level were discussed.The results showed that POD activity of green Asparagus treated by 80%O2+20%CO2 was lower than that of air MAP after storage for 30 days(P<0.05),and the relative expression level of POD gene was always lower than that of air MAP.There was a significant difference between the two groups during storage from 12 to 24 days(P<0.05).Therefore,high concentration oxygen MAP can effectively reduce POD activity and inhibit gene expression,which provides theoretical support for further research on the mechanism of modified atmosphere preservation and industrial application.
