摘 要:为了解2015—2018年蜜饯食品中铝的残留状况和评估其残留量对人体的健康风险,采用电感耦合等离子体质谱法对蜜饯食品中铝残留量进行检测,在此基础上结合暴露评估标准和点评估方法进行人体的健康风险评估。铝的残留量结果表明,4年间蜜饯中铝的残留量超标率为16.7%,且从P90位数全部超过40 mg/kg,从不同类别分析,话化类蜜饯中铝的残留量平均值最高,为64.56 mg/kg,超标率达34.1%;暴露评估结果表明,年龄越大,蜜饯的每日最大允许摄入量越大,且男性大于女性,健康风险评估结果表明,少年儿童摄入蜜饯中铝残留量的健康风险最高,且女性大于男性。因此,要加强对少年儿童和成年女性的关注,控制铝残留量较高食物的摄入量。Aim to understand the residual status of aluminum in preserved fruits from 2015 to 2018 and assess the human health risks.Aluminum residue in preserved fruits was detected by inductively coupled plasma mass spectrometry(Icp-Ms),and human health risk was evaluated by exposure assessment and point assessment method.The aluminum residue results showed that the over standard rate during four years was 16.7%,and had exceeded 40 mg/kg from P90.The different kinds of preserved fruits were analyzed,and the aluminum residue of the speech classes was 64.56 mg/kg which was the highest,with the over standard rate of 34.1%.The exposure assessment results indicated that the maximum allowable daily intake of preserved fruits increased with age,and was greater in males than in females.The results of human health risk assessment showed that children and adolescents had the highest health risk when they consumed preserved fruits,and females had higher risk than males.Increasing more attention to children and adult women was required to limit food intake with high levels of aluminum residue.
