摘 要:为进一步了解西宁市售鲜蛋的微生物污染情况,本研究对不同来源、不同品种的市售鲜蛋蛋壳表面及其内容物进行了微生物污染情况的调查和分析。结果表明:在蛋壳表面,12.9%的鲜蛋细菌菌落总数在10^(6)CFU/枚以上,17.1%的鲜蛋大肠菌群数在10^(4)CFU/枚以上,且仅从青海西宁的10枚土鸡蛋中检测出沙门菌;在鲜蛋内容物中,金黄色葡萄球菌、致病性大肠埃希菌和沙门菌的检出率分别为81.4%、14.3%和21.4%。通过调查发现,青海西宁土鸡蛋细菌污染情况显著高于其他种类鲜蛋,西宁市售不同来源、不同品种鲜蛋存在细菌污染且污染较为严重,相关部门应加强控制和管理。The microbial contamination of the surface and content of fresh eggs sold in the local market from different sources are investigated and analyzed in order to explore the microbial contamination of fresh eggs sold in Xining. The results show that the total number of bacteria on the surface of eggshell in 12.9% fresh eggs is more than 10^(6) CFU/egg, and the total number of coliform bacteria in 17.1% fresh eggs is more than 10^(4) CFU/egg. Salmonella is detected only from 10 native eggs in Xining. The detection rates of Staphylococcus aureus,pathogenic Escherichia coli and Salmonella in eggs are 81.4%,14.3% and 21.4% respectively. It is found that the bacterial contamination of native eggs in Xining is significantly higher than that of other fresh eggs. The fresh eggs from different sources sold in Xining have serious bacterial pollution, and the relevant departments should strengthen control and management.
