摘 要:目的了解中山市食品中化学污染物的污染状况,以便有针对性地加强食品卫生监督监测管理,为建立食品污染物的控制和监测管理体系提供科学依据。方法食品中六六六、滴滴涕残留量,有机磷农药残留量,黄曲霉毒素B1、铅、铜、镉、汞、糖精钠、山梨酸、苯甲酸等化学污染物的测定方法均按有关国标食品卫生检验方法进行,对该市各生产厂家、商场、超市及农贸市场等16大类食品中化学污染物进行检测。结果2004年4月至2006年3月两年度共采集16大类食品1 621份,其中127份样品检测有机磷农药残留量,超标率为47.24%;71份样品检测有机氯农药残留量,超标率为8.45%;975份样品检测铅,超标率为7.49%;815份样品检测铜,超标率为6.75%;467份样品检测镉,超标率为11.93%;315份样品检测汞,超标率为16.50%;435份样品检测糖精钠,超标率为14.02%;587份样品检测苯甲酸、山梨酸,超标率分别为0.51%和0.68%;228份样品检测黄曲霉毒素B1,没有样品超出国家标准。结论中山市食品的整体卫生质量良好,但部分食品的卫生质量不容乐观,应加强对有机磷农药残留量等食品化学污染物的卫生管理和监测。[Objective] To learn the contamination status of chemical contaminants in the foods of Zhongshan City in order to strengthen food hygienic supervision and provide scientific basis for establishing a managing system for food contamination control and surveillance.[Methods]Determination was made on the residue amount of hexachlorocyclohexane,DDT,organophosphorus pesticide,aflatoxin B1,lead,copper,cadmium,mercury,saccharin sodium,sorbic acid and benzoic acid according to the national standard;detection was made on the chemical contaminants in 16 categories of foods in markets and supermarkets of Zhoushan.([Results] 1 621)samples of 16 categories of foods were collected during the period of April of 2004 to March of 2006,among which 127 samples(47.24%) were found with organophosphorus residue,71 samples(8.45%) were found with organochlorine residue,975 samples(7.49%) with lead residue,815 samples(6.75%) with copper residue,467 samples(11.93%) with cadmium residue,315 samples(16.50%) with mercury residue,435 samples (14.02%) with saccharin sodium residue,587samples with benzoic acid residue(0.51%) and sorbic acid residue(0.68%),no samples among the 228 samples succeeded the national standard in aflatoxin B1.[Conclusion] The overall hygienic quality of the foods in Zhongshan is fine,however,not satisfactory;hygienic management and supervision on chemical contaminants should be strengthened.
