摘  要:用 β -环状糊精包合法脱除猪脑水解液体系中的胆固醇 .采用二次回归旋转组合试验设计方案 ,建立胆固醇脱除率与水解液浓度 (X1)、包合反应温度 (X2 )、β -CD/胆固醇摩尔比 (X3 )和搅拌时间 (X4) 的数学模型 .采用罚函数法进行寻优得到较优的参数为 :X1=2 0 .8%、X2 =4 7℃、X3 =3.8和X4=31min ,在此条件下得到胆固醇脱除率为 94 .7% .A new process to remove cholesterol from pig brains hydrolysate was conducted with the quadratic-rotation-interchangeable-composite experimental design. A mathematical model with the hydrolysate concentration(X 1), inclusion temperature(X 2), the molar ratio of β-CD to cholesterol(X 3) and stirring time(X 4) was given and the effects of the four factors on the cholesterol reduction were explored. Furthermore, the Hook-J methodology was applied to optimize the processing parameters. The results show that to fix hydrolysate concentration at 20.8%, temperature at 47?℃, β-CD to cholesterol mola ratio at 3.8, stirring time for 31minutes and the cholesterol reduction percentage was 94.7%.
