摘　　要：目的通过对大型超市卫生质量的调查,为整顿经营秩序和规范经营行为、加强食品卫生监督管理提供依据。方法在该市5个区11间大型超市随机抽取一定数量不同种类的食品进行检验。结果食品超市散装熟肉制品、散装蜜饯存在较大的隐患,饮料、糖果、消毒牛乳、糕点类食品卫生状况较好。结论食品超市散装熟食、蜜饯亟需加大监督监测管理力度。Objective: By the survey of food hygiene quality in the mega-stores, we offer the basis to rectify the management order and norm operation, to strengthen food hygiene supervision and management. Methods: Some different types of food examined randomly in 11 mega-stores of 5 districts of this city. Results: The well-done meat products in bulk in the food supermarket, fruits in bulk have greater hidden hygiene dangers. Beverage, candy, disinfect ox milk, cake hare better food hygiene. Conclusion: Prepared food in bulk, fruits in the food supermarket need devoting more efforts to be supervised and monitored.
