摘　　要：刀片式粉碎设备的特性参数:翻转次数和涡流量、定转子高剪切均质机的平均剪切速率和颗粒与定转子的碰撞次数、组合式高剪切粉碎机的关键结构等都影响这些设备对果蔬纤维的粉碎效果。本文对上述问题进行了讨论,并比较上述三种设备的粉碎效果。In the fruit-vegetable wet shattering, how do the turn number and the amount of eddy of flow' character parameters in blade shattering equipments affect the shattering effect, how do average shearing rates and the collision number of particle and stator-rotor in stator-rotor homogenizer affect the shattering effect. And how does the key structure of high shearing equipment affect the shattering effect. This paper discusses above these questions, and compares the shattering effect of these equipments.
