摘  要:对一株高产细胞表面植酸酶酵母突变株WZ 4菌的细胞植酸酶性质进行了研究,结果表明:该酶的最适pH为5,最适温度为50℃,Km为0.666mmol/L。此外,WZ 4菌产植酸酶受控于培养基中的磷的质量浓度,最大产酶磷的质量浓度为50mg/L,当磷的质量浓度大于0.1g/L时产酶被完全阻遏。The behavior of a high-yield mutant WZ-4 bacterium of the cell-surface phytase yeast was studied. The results indicate that the optimum pH value for the yeast is 5, the optimum temperature is 50 ℃, and the K m value for the Na-phytate is 0.666 mmol/L. Besides, the phytase production of WZ-4 bacterium is controlled by the phosphorus concentration in the culture medium. The maximum production of phytase occurrs in the culture medium containing 0.5 mg phosphorus per 100mL. When the concentration of phosphorus in the medium is more than 10 mg phosphorus per 100mL, the phytase production is completely repressed.
