摘　　要：论述了食物成分分析中的质量控制方法,包括统一分析方法、实验室内质控和实验室间质控;提出了三种评价室间质控结果的方法,即双样品法、质量控制图法和临界差法,并分别应用这些方法对17个实验室的7种食物成分分析结果进行了质量评价。In this article we discussed methods of quality control in food nu- trient composition assay.It included unification analysis method,internal quality control and external quality control,we submitted three methods to evaluate the results of the external quality control.They are Youden pairs method, control chart method and critical error method.we used these methods to evaluate seven kinds of food nutrient composition assay results which are from seventeen laboratories.
