摘　　要：本文研究辣椒红素的提取方法和从辣椒红素混合物中分离出β-胡萝卜素、辣椒玉红素、辣椒红素。β-Car, capsanthin, Capsorubin are very useful substances. We seperated them from the mixture of capsanthin according to the ditlerences of their structure. By paper chromotograph, UV spectra and IR spectra- we identified them.
