摘  要:乳清制品一般是指乳清(粉)和乳糖,是生产干酪及干酪素的副产品.乳清在食品当中的应用越来越广泛,各国尤其是西方国家非常重视乳清的综合开发与利用.我国对干酪乳清的开发较少,大多只限于研究阶段.Whey products include whey and lactose ones, which is used widely over the food industry. As the food industry grows and consumers explore new categories, ingredient suppliers work continuously develop options for a variety of products. By no means does a one-size-fits-all philosophy suffice as manufacturers strive to offer options for everyone. Ingredient companies aiming to reach new heights are a critical piece of the process. In China, application of whey is just at the beginning, which has much potentiality.
