摘  要:研究了以玉米油甲酯为原料代替单一脂肪酸合成玉米油蔗糖酯的工艺。考察了反应温度、催化剂种类和乳化剂用量对实验结果的影响,确定了合成反应的较佳工艺条件。结果表明:在催化剂C用量约为玉米油甲酯质量的3%,乳化剂A用量为玉米油甲酯质量的8%,135℃下反应3 5h~4 5h时,玉米油甲酯转化率可达88 49%,其产品中油溶性蔗糖多酯质量分数可达67 9%;产品的表面张力为31 4mN/m,去污力为82 0%,脱脂力为36%,稳泡能力为10/8mm/mm(起始/5min),HLB值为11 7。<Abstrcat>The technology for the synthesis of sucrose ester using corn oil methyl ester as starting material in place of purified fatty acids by phase transfer catalysis.The effects of reaction temperature,kind and dosage of catalyst as well as dosage of emulsifier against the reaction results were investigated and the optimal conditions were identified.Experimental results show that,using catalyst C with dosage of 3 %(mass fraction of corn oil methyl ester)and emulsifier A with dosage of (8 %)(mass fraction of corn oil methyl ester),at reaction temperature of 135 ℃ for 3.5 h~4 h,the conversion of the ester can achieve 88.49 %,in which the content of oil soluble sucrose polyester can achieve 67.9 %.The performance indices of the product are,surface tension 31.4 mN/m,detergency 82.0 %,degreasing power 36 %,foam stabilizing power 10/8 mm/mm((0 min)/5 min)and HLB 11.7.
