摘  要:在模拟胃肠道环境下,即人工胃液(pH值为1.5~4.5)、人工肠液、胆汁(质量浓度0.3~3g/L)和高盐(NaCl质量浓度50~80g/L)对3株乳杆菌的存活性能进行了研究。结果表明,3株乳杆菌在pH值为2.5~4.5的人工胃液中具有较强的生存能力,2.5h活菌数仍达108mL-1左右;在人工肠液作用3h,活菌数始终在108mL-1以上;在0.3%的胆汁环境作用8h,LactobacillusplantarumST-Ⅲ和LactobacilluscaseiLC2W仍有存活;三者均能耐受NaCl浓度6.5%的高渗环境。The survival properties of three lactobacillus strains were studied in imitating gastroenteric environments, such as artificial gastric fluids ( pH=1.5~4.5), artificial intestinal fluids, bile (0.3~3 g./L ) and high concentration of NaCl (50~80 g/L ). The results indicated that all the three strains survived well both in artificial gastric fluids at pH=2.5~4.5 for 2.5 h and in artificial intestinal fluids after 3 h, and the viable bacterial cells for each lactobacillus strains could reach about 108cfu/mL. Among the three lactobacillus strains studied, Lactobacillus plantarum ST-Ⅲ and Lactobacillus casei LC2W survived at 0.3% bile for 8 h. In addition, all the three strains could tolerate 6.5% NaCl. Therefore, all the three lactobacillus strains could be selected as potential candidates of probiotics.
