摘 要:以迟熟中粳稻通育粳1号为材料,研究水稻生育中期施用氮肥与稻米蛋白质含量及其淀粉粘滞性的关系。结果表明,稻米的蛋白质含量随施氮量增加、氮肥施期后延而提高;在水稻生育中期,施氮量对稻米淀粉粘滞性有显著影响,但氮肥施期对稻米淀粉粘滞性并无明显的影响。施氮量在0至270.0kg/hm2范围内,随施氮量增加,稻米淀粉的最高粘度、热浆粘度、崩解值、最终粘度均显著降低,消减值和糊化温度则有增加的趋势。稻米蛋白质含量与稻米淀粉的最高粘度、热浆粘度、崩解值、最终粘度呈极显著负相关关系;与消减值无相关性;而与糊化温度呈极显著正相关关系。With a late medium rice cultivar Tongyujing 1 as the testing material, relationship between the application of nitrogen fertilizer at the middle growing stage and grain protein content and starch viscosity were studied. The results showed that the grain protein content increased with raising the amount of nitrogen applied and delaying the N dressing date at the middle growing stage. The grain starch viscosity was significantly affected by various amounts of nitrogen applied at the middle growth stage, but not by different N dressing dates. Within the range of 0-270.0 kg/hm^2 of N application rates, peak viscosity, hot viscosity, breakdown, final viscosity of grain starch decreased significantly with the N dressing amount, while setback and pasting temperature showed a tendency to increase with the N dressing amount. The grain protein content had significantly negative relationships with the peak viscosity, hot viscosity, breakdown and final viscosity, and a significantly positive relationship with the pasting temperature, but no relationship with the setback.
