摘 要:为寻求一种简单、快速、准确地检测牛乳掺假的方法,分析了新近研发的超声乳成分分析仪对牛乳掺蛋白粉和脲的检测效果,并将结果与目前大量使用的Foss红外分析仪和国标法作了比较。结果表明:掺加水解动物蛋白粉会使3种方法的蛋白数据上升,但Foss红外分析仪和超声乳成分分析仪的升幅小于国标法;掺脲会使国标法的蛋白检测数据上升,但对其它两种分析仪基本无影响。Milk can be adulterated easily with cheaper additives,such as water,vegetable oil,urea and hydrolyzed animal protein,which are difficult to be detected without advanced facility. The analytical effect of ultrasonic milk analyzer to milk adulterated with urea and hydrolyzed animal protein was introduced in this paper. The results were compared with FOSS 134 infra milk analyzer and standard method(GB). Results showed that when the milk was adulterated with hydrolyzed animal protein,all three methods showed an increased protein level,but the standard methods showed a large degree. When the milk was adulterated with urea the contents of protein significant increased analyzed by standard methods,but the contents of protein was normal analyzed by ultrasonic milk analyzer and Foss analyzer.
