摘  要:将流动注射技术引入Bradford蛋白质测定法,利用Sepadex G-100凝胶层析柱分离黄酒中的蛋白质,可直接测定蛋白质的含量和分子量分布.成品酒(熟酒)为5.32 g/L(6.86 g/L);高分子蛋白质(FW>25000)占10.52%(13.08%);中分子蛋白质(FW:25000~5000)占49.12%(54.12%);小分子蛋白质(FW<5000)占40.36%(32.80%),并得到黄酒中蛋白质含量与分子量分布的曲线谱图,可监控和预测黄酒的品质.Rice wine was directly introduced to a Sepadex G-100 gel chromatography column, and rice wine proteins were eluted from the column and assayed by bradford method connected a flow injection analysis. The contents and molecular weights distribution of rice wine proteins are as follows:for the bottled rice wine, the protein content is 5.32 g/L and the fractins of hgith molecular weights ( FW 〉 25000) , middle molecular weights (FW 25000-5000) and low molecular weights (FW 〈5000) are 10.52%, 49.12% and 40.36%, respectively. Compare with the bottled rice wine, those of mature rice wine are 6.86 g/L, 13.08% , 54.12% and 32.80%, respectively. The relation ship between contents and molecular weights distribution of rice wine protein was showed by an eluted curve. According to the eluted curve of rice wine protein, a series of profiles of rice wine proteins, was set up. It can be applied to evaluate and forecast the qualities of rice wine.
