摘  要:目的了解湖南市场上销售食用槟榔的卫生状况,以便加强食用槟榔的卫生管理.方法采用随机抽样方法,随机抽取市场上销售的食用槟榔,按DB43/132-2004中方法进行理化与微生物指标的检测.结果2002~2004年共随机抽检食用槟榔样品81个,合格率为66.67%;三年间食用槟榔合格率差异有显著性(χ2=8.73,P<0.05),以2004年合格率最高为84.85%;不同生产产地食用槟榔合格率差异无显著性(χ2=0.74,P>0.05);在所检测指标中以氟、菌落总数合格率最低,分别为76.32%、81.48%.其次为霉菌、山梨酸钾与苯甲酸钠,合格率分别为94.92%、89.85%、98.55%.有机磷农药与致病菌未检出,其它检测指标合格率达100%.结论湖南市场上食用槟榔整体合格率偏低,其主要原因是微生物指标超标,提示今后应进一步加强食用槟榔生产、包装、销售等卫生管理.Objective To understand the hygienic status of edible areca - nut sold on market in Hunan Province, and stress hygienic administration on it. Method Random sampling was used to edible areca nut sold on market, followed by series of physicochemical and microbiological examination on DEN3/132 2004 standard. Result A total of 81 samples of edible areca- nut were ramdomly collected and tested from 2002 through 2004, and the qualified rate was 66.67 %, showing significant differences among three years (X^2=8.73, P〈0.05). The highest qualified rate was 84.85% in 2004. However, there showed no significant difference between production bases (X^2 = 0.74, P〉0.05). In all indexes examined, the item of the qualified rate of colony population and fluoride was the lowest by 81.48% and 76.32%, followed by that of fungus, potas- sium sorbate and sodium benzoate in sequence, which was 94. 92 %, 89.8.5 % and 98.55 % respectively. No organophosphorus pesticide or pathogenic bacteria were found, and other indexes detected were 100% qualified. Conclusion The general qualified rate of edible areca nut sold on market in Hunan Province is relatively low due to super - standard of microbial indexes, suggesting a necessary strengthening of hygienic administration to links of production, packaging and selling of edible areca nut.
