摘  要:测定了桦木醋液、柞木醋液和杂木醋液的pH值、有机酸含量和精制得率,结果表明桦木醋液pH值(3.97)最低,杂木醋液pH值(4.21)最高;柞木醋液有机酸含量(5.20%)最高,桦木醋液有机酸含量(2.02%)最低;桦木醋液精制得率(92.2%)相对较高;木醋液稀释倍数与pH值的关系表现为三种木醋液的pH值随着稀释倍数的增加而增加。紫外吸收光谱表明桦木木醋液、柞木醋液和杂木醋液的300倍稀释液在近紫外区的最大吸光度分别为0.400,0.352和0.541;柞木醋液氨基酸总量最高(63.6mg/g),桦木醋液氨基酸总量最低(57.0mg/g)。The pH values, organic acid contents and refined fields of wood vinegar for White Birch (Betula platyphylla), Mongolian Oak (Quercus mongolica) and mixed hardwood were tested. The results showed that pH value of White Birch wood vinegar (3.97) was lowest, while pH value of mixed hardwood vinegar (4.21) was highest among three kinds of wood vinegar. The organic acid content for Mongolian Oak wood vinegar (5.20%) was the biggest, but the smallest for White Birch wood vinegar (2.02%) among three types of wood vinegar. Additionally, the refined yield of White Birch wood vinegar (92.2%) was relatively high. The relationship between dilution ratios and pH values presented that pH values for three kinds of wood vinegar increased with dilution ratios going up. The result of ultraviolet absorption spectrum demonstrated that the largest absorbance of 300-dilution ratio wood vinegar near ultraviolet region for White Birch, Mongolian Oak and mixed hardwood was 0.400, 0.352 and 0.541, respectively. The amino acid total content of Mongolian Oak was the highest (63.6 mg/g), while the amino acid total content of White Birch was the lowest (57.0 mg/g).
