摘　　要：综述了十几种酶在食品、饲料、医药工业领域的一些应用,并且归纳了可以产生这些酶的菌物,为了人们利用先进的生物学技术,把菌物资源转化为对人类有益的物质,为人类的生活、生产服务提供参考。ABSTRACT This article introduced some applications of more than ten kinds of enzymes in the field of food, feed, and medicine, and summarized the fungi which is used to produce the enzymes. In order to provide the references for transforming the fungi resources into the benefit thing, and serve the mankind.
