摘　　要：介绍了植物食用色素的分类、提取方法、纯化技术、色素的改性,分析了植物食用天然色素的发展现状及发展趋势。The edible plant-pigment, included classification, extractive method, purification technology and modified pigment, were introduced. The current research situation and development prospect in natural food plant-pigment was analyzed.
