摘　　要：木瓜蛋白酶属巯基蛋白酶,广泛存在于番木瓜的茎叶和果实中。本文对木瓜蛋白酶的结构,组成以及在食品、医药、工业中的用途进行了综述。Papain is a sulfhydryl protease coming from the stem and fruit of Carica papaya widely. This text summarizes the configuration and composing of the papain and the use in foodstuff, medicine and industry.
