深圳市2003~2005年度月饼的检测结果分析

摘  要:目的了解深圳市市售月饼的卫生质量状况。方法对2003~2005年共677份市售的各类月饼进行常规监测。结果3年来深圳市售月饼的总合格率为96.0%,不同品种以潮式类月饼和莲蓉类月饼合格率为最高,分别为100%和99.1%;合格率最低是伍仁火腿类月饼,为92.9%。3年间月饼合格率差别没有显著性差异;不同种类间月饼的合格率有显著性差异。结论3年来全市月饼产品卫生质量良好。Objective To understand the quality and hygiene status of marketing mooncakes in Shenzhen City. Methods 667 samples of all kinds of mooncakes were examined routinely from 2003 to 2005, Results The total qualification rate of marketing mooncakes in Shenzhen City was 96.0 %. Of different kinds of mooncakcs, the qualification rates of Chaozhou type mooncakes and lotusseed paste mooncakes were the highest being 100% and 99.1% respectively;And the qualification rates of nudetham mooncakes was the lowest (92.9 % ). There was no significance difference of the mooncakes during the 3 years;But the qualification rates among different types of mooncakes showed significant differences ( P 〈 0.05). Conclusion The hygiene status and quality of mooncake products during the 3 years are good.
