摘  要:笋蠹螟是云南省西双版纳州和德宏州境内野生竹林中的一种蛀竹笋螟虫,当地群众有食用该虫幼虫的习惯,俗称“竹蛆”,为少数民族美食之一。为了解笋蠹螟的卫生情况,测定了笋蠹螟的菌落总数、大肠菌群,并按照食品中肠道致病菌的检验程序检定笋蠹螟肠道中是否存在致病菌。检测结果表明,笋蠹螟自身携带大量微生物,菌落总数达4.5×106~5.1×106CFUg,大肠菌群(MPN)≥2.4×104100g,并且其肠道内还携带沙门菌、志贺菌等致病菌,食用不当会有潜在危险性。Bamboo moth is a kind of insect, discovered in Xishuangbanna canton and De-hong canton of Yunnan Province. Minority people there have the habit of eating its larva and consider it as a kind of dainty. The article analyzed the sanitary index of the Bamboo moth through the measuration of microbial index of the Bamboo moth from Xishuangbanna canton. The result showed that its aerobic bacterial count was as much as 4.5 × 10^6 - 5.1 × 10^6CFU/g, MPN of Coli form bacteria was over 2.4 × 10^4/100 g, and there were Salmonella and Shigella in the intestine of the Bamboo moth. Therefore the Bamboo moth is microbially dangerous when people eat it without proper processing.
