摘　　要：本文介绍了动物源性食品安全的定义和存在的主要问题,重点阐述了酶联免疫吸附方法(ELISA)在兽药残留、农药残留、动物疫病、微生物、动物毒素快速检测中的应用。In this paper, the definition and questions of animal food safety were introduced,The application of ELISA in rapid determination was commented ,including the determination Of food drug residure,pesticide residure,epidemic disease,microorganism and animal toxin.
