摘　　要：[目的]了解济宁市农贸市场生鸡蛋在生产、运输、销售等环节的卫生状况与食用者的卫生知识，积累相关资料。[方法]2003年7～8月，对济宁市城区2处养鸡场、8家生鸡蛋销售点的卫生状况及300名消费者的卫生知识进行调查。[结果]2家养鸡场卫生状况良好，但从业人员未进行健康查体；8家生鸡蛋销售点均无卫生许可证，卫生状况较差，无冷藏设备，从业人员未进行健康查体。300名消费者中，97％从农贸市场购买鸡蛋，90％注意鸡蛋的新鲜度；夏季冰箱保存的占94％，直接放冰盒内保存的占84％，保存时间最长1个月；食用前用洗净剂洗鸡蛋的占14％，每天食用鸡蛋1次的占84％，用开水冲食鸡蛋的占21％；认为应标明“产蛋日期”的占52％；知道细菌能进入鸡蛋内引起食用者中毒的占54％。[结论]济宁市生鸡蛋在运输、销售、储存等环节的卫生状况存在较多问题，消费者对生鸡蛋使用前处理及食用方法等相关卫生知识亟待提高。[Objective] To understand the sanitary quality of eggs in the course of production, transportation and exchange and accumulate data. [Methods]From July 2003 to August, 2 chicken farms,8eggs merchants and 300 consumers were field investigation. [Results]The 2 chicken fam＇s sanitary condition are quite well,but its workers have never experienced any physical examination. None of the 8 egg merchants have sanitary certificate, without any refrigerating equipment their sanitary condition are hot so good. The workers don＇ t have experienced physical examination too. Among the 300 consumer,97 percent of them buy eggs from markets. 90 percent pay attention to egg＇s freshness. 94 percent put eggs in refrigerators in summer. 14 percent use detergent before eating. 84 percent eat eggs everyday. 52 percent people think that＂ produce date＂should be marked. [Conclusion]There are quite a lot problems in the course of production transportation and exchange in Jining,consumers should improve their knowledge on how to deal with eggs before eating and how to eat eggs.
