桑籽的营养成分研究

摘　　要：测定了桑籽中氨基酸的组成和桑籽油脂肪酸的组分及理化特性指标。结果表明,桑籽含油量为33.4%,粗蛋白含量为25%,总黄酮含量为0.03%。此外,桑籽油还含丰富的不饱和脂肪酸,含量超过80%,VE含量为0.07%。桑籽油作为一种优质植物油脂具有较好的开发利用前景。In this report, the composition of amino acid, oil and its physical and chemical characters in mulberry seeds were determined and analyzed. The results showed that the oil content is 33.4%, the protein content is 25%, the flavonoids content is 0, 03%, and the VE content is 0, 07%. Moreover, there are many kinds of the unsaturated fatty acid occupied over 80% in the oil contents, The above results suggested that the prospect of developing and application of this special vegetation oil is highlighted.
