摘 要:对10尾泰国笋壳鱼的肌肉营养成分与营养品质进行了较全面的分析。结果表明:笋壳鱼肌肉(鲜样)中粗蛋白含量(17.83±0.09)%,粗脂肪含量(0.25±0.02)%,水分含量(78.12±0.11)%,粗灰分含量(1.07±0.01)%。肌肉中含有18种氨基酸,总量为(74.02±2.68)%(干样百分比),其中8种人体必需氨基酸总量是(29.34±1.17)%,占氨基酸总量的39.63%;必需氨基酸指数(EAAI)为61.66,其构成比例符合FAO/WHO的标准。4种鲜味氨基酸总量为(26.12±0.84)%(干样百分比),脂肪酸中EPA与DHA含量较高,分别为2.24%、4.74%,微量元素比值合理。表明泰国笋壳鱼有较高的食用价值与保健作用。Nutritional components in the muscle of Oxyeleotris marmoratus Bleeker were tested and analyzed with routine methods. Samples of 5 wild individuals were collected from Vietnam in September of 2004. The results showed that contents of crude protein, crude fat, moisture and crude ash of fresh muscles were (17.83±0.09) %, (0.25±0.02) %, (78.12±0.11) % and (1.07±0.01)% respectively. 18 common amino acids and 8 essential amino acids for human needs were found in the muscle. In dry sample, the total content of amino acids was 74.02±2.68 %, the content of essential amino acids was (29.34±1.17) %, which accounted for 39.63 %. The essential amino acids index (EAAI) was 61.66. It was apparent that the content of the different amino acids was stable and the constitutional rate of the essential amino acids accorded with the FAO/WHO Standard, In dry sample, the content of four kinds ddicious amino acids was (26.12±0.84) %. The contents of EPA and DHA in fatty acids were 2.24 %, 4.74 %, which were higher than some other economic fishes. The composition of trace elements in the muscle of O. marmoratus Bleeker was reasonable. It was indicated that O. marmoratus Bleeker is one of freshwater fishes with better nutritive value and raising value, deserving of exploitation and utilization.
