摘  要:为了优化酶水解法生产芥酸的工艺条件,在AOT/异辛烷反胶束体系中,选择合适的脂肪酶,并考察其水解的影响因素。结果表明:来源于洋葱假单胞菌(Pseudomonascepacia)的脂肪酶对于高芥酸菜子油的水解能力强。当反胶束体系含水量为11,pH值为7.0,菜子油浓度为15%(v/v),水解温度为35℃,反应不到1h,水解率即达到50%;反应24h,水解完全。In order to optimize the production conditions of erucic acid by enzyme-catalyzed hydrolysis in AOT/isooctane reversed micelle system, the suitable lipase was selected and the affecting factors on hydrolysis were studied. The results showed that Pseudomonas cepacia Lipase has the strongest ability of hydrolysis and the optimum conditions of hydrolysis of erucic acid-rich rapeseed oil were as follows: water-to-AOT ratio=11, pH=7.0, concentration of rapeseed oil=15%(v/v), and temperature=35℃. 50% of substrate was hydrolyzed within 1 hour and the hydrolysis was completed in 24 hours.
