斜面培养法在冷饮食品大肠菌群检测中的应用

摘　　要：大肠菌群是评价冷饮食品卫生质量的重要指标菌。目前，国家卫生部颁布的GB发酵检验方法，操作手续繁琐，费用高。且耗时3d。不适应基层监测的实际要求；而应用快速斜面培养法检测冷饮食品中的大肠菌群，具有操作简单、结果准确等特点，在18～24h内即可报告结果．比发酵法缩短2d时间，且结果同样可用MPN报告数值。The intestinal colony was an important index indicating the quality of cold drink and snack. The prevailing inspection method, named as fermentation（GB） ,was set up by the Ministry of Health, which involves a great deal of paperwork. But it was practically expensive, time-cansuming and inconvenient for the grass-mot. What we propose was the method of slant culture, which can shorten the procedure for about 48 hours （from 72 hours to 18 ～ 24 hours）, and the result can be reported as MPN.
