摘  要:对辽春9号面粉提取的小麦酯酶进行了研究,得到该酶的最佳酶促反应条件,即酶液浓度为原酶液的25%、酶促反应pH为6.4、反应时间为21min、反应温度为40℃、底物浓度为1.25mg/ml、显色液浓度为0.25mg/ml。并选用了3种有机磷农药对该小麦酯酶的抑制作用进行了研究。Research was conducted on wheat esterase extracted from flour made from the cultivar Liaochun 9. Esterase reaction conditions were optimized as follows, Enzyme concentration was 25% of the crude enzyme preparation, optimal pH was 6,4, reaction time was 21 min, optimal reaction temperature was 40℃, and substrate and fast blue B concentrations were 1.25 and 0.25 mg/ml, respectively, Inhibition of the esterase by three organophosphate pesticides was also studied.
