摘　　要：[目的]了解汕头口岸出口牛蛙腿的卫生状况,确保出口食品的卫生质量。[方法]于2002～2006年3月,对出口牛蛙腿连续监测沙门菌、金黄色葡萄球菌、副溶血性弧菌、霍乱弧菌以及细菌总数、大肠埃希菌6个项目,对生产加工过程按《出口食品生产企业卫生注册登记管理规定》的要求,定期及不定期进行监督检查,对产品到国外口岸的检验情况进行跟踪。[结果]检测133批牛蛙腿,检出致病菌1批,为沙门菌,检出率0．8％；细菌总数、粪大肠埃希菌均符合卫生要求；出口牛蛙腿133批,被国外检出沙门菌3批,检出率2．3％。在定期与不定期监督检查中,发现加工过程的卫生控制存在一些缺陷,已落实整改183项次。[结论]汕头口岸出口牛蛙腿的卫生质量总体是好的,但在生产加工过程中还存在一些卫生质量隐患,应加强生产过程的卫生监督管理。Objective To learn the sanitary situation of bullfrog legs exported from Shantou city so sa to ensure the sanitary quality of exported food. Methods A continuous test was performed for exported bullfrog legs on 6 items including Salmonella, and Escherichia coli, etc. during the period of 2002 to March 2006. Regular and irregular supervisions and inspections on the plant processing were conducted according to The Regulations of Sanitary Registration and Administration for Export Food Production Enterprises. Results We inspected 133 batches of exported bullfrog legs, it showed that 1 batch was detected the presence of Salmonella, at a positive rate of 0.8%, and total bacteria and Escherichia coli met the sanitary requirements, while the destination inspection identified the presence of Salmonella in 3 batches, at a positive rate of 2.3 %. During the supervision and inspection,we found some processing problems in sanitary control and improving measures were taken to deal with 183 problems. Conclusion The general sanitary situation of the exported bullfrog legs was rdlatively good but there were some potential problems in sanitary control and quality during processing. Sanitary supervision and administration on processing should be further reinforced.
