摘  要:牡荆子乙醇提取物可以作为天然的食品抗氧化剂.因此,对其抗氧化活性的研究是有价值的.用乙醇提取牡荆子粉体样品的条件为:样品100g,用250ml乙醇提取,温度60℃-65℃,时间60h,提取3次,得提取物依次为2.44g,1.23g和0.84g,提取物中黄酮含量分别为11.52%,11.51%和9.50%,向猪油中加入牡荆子提取物为0.030%时,9d内可使猪油的POV值较空白对照样的POV值降到8.05%.加入量为0.120%时,猪油POV值在9d内变化很小,这与加入没食子酸丙酯0.020%时猪油POV值的变化相当,表明牡荆子提取物对油脂有较强抗氧化活性.实验表明,牡荆子提取物抗氧化活性,与所含黄酮化合物的量相关,从而推断黄酮化合物是提取物抗氧化的重要活性成分.Negundo Chastetree Fruit ethanol extract can be a natural food antioxidants. Therefore the study of its resistance to antioxidant activites is valuable. The conditions of extracting 100 g flavone sample from Negundo Chastetree Fruit by ethanol are 250 ml ethanol, 60 ℃-65℃, and 60 h. The extract of 100 g Negundo Chastetree Fruit for 3 times are 2.44 g,1.23 g,and 0.84 g and the contents of flavoneare 11.52 % ,11.51% ,and 9.50 % respectively. 0.030 % extract could decrease POV in oil to 8.05 % within 9 days,while 0. 120 % extract makes different result. The POV in oil changes little, as 0.020 % Gallic acid third fat is added. The experiment indicates that antioxidant activites of the extract from Negundo Chastetree Fruit is relevant to the content of flavone, so it can he concluded that flavone is the most important antioxiactive component of the extraction from Negundo Chastetree Fruit.
