摘  要:对种植在6个不同地区的17个糜子品种的籽粒品质分析结果表明:糜子籽粒蛋白质含量平均为11.09%,地区间、品种间均存在一定差异,糯性品种蛋白质含量高于粳性,且籽粒蛋白质随着生态高度(纬度×海拔)的增加有降低趋势(r=-0.5207);在糜子籽粒蛋白质组分中,清蛋白含量最高,谷蛋白和球蛋白次之,醇溶蛋白含量最低,且4种组分仅占蛋白质总量的34.71%;糜子籽粒富含谷氨酸、脯氨酸和亮氨酸。The grain quality of 17 Panicum Miliaceum L.varieties grown in 6 experiment sites were studied.The results showed that:the average content of the grain protein is 11.09%,the differences exist among varieties and regions.The protein content decreased with the increase of altitude,while increased with that of latitude.Among the grain protein fractions of millets, albumins content was the highest,glutilins and globulins next,prolamins content the lowest.The contents of the above 4 fractions take only 34.71% of the total protein content.Glulamic acid,proline and leuline content were relatively high,the restricted amino acid was cystine and methionine.
