摘 要:预冷可以迅速地排除果蔬采后的田间热,降低呼吸作用,延缓其成熟衰老的速度,提高贮藏寿命。通风预冷因其适应性广、投资和运转费用少,易于在生产上推广应用,是较为实用、有效的预冷方法。为此,利用通风预冷试验台,测定了不同条件下通风预冷过程中单颗龙眼的温变特性;同时,研究了冷风温度、通风速度对预冷速度的影响,为开发强制通风预冷设备提供了基础数据和理论依据。Pre-cooling is the first operation in the cold chain, and is essential for produce as they are perishable in nature. Rapid cooling has been clearly shown to prolong the storage life of freshly harvested produce. Forced-air cooling is the most versatile and widely used of all cooling methods. A forced-air pre-cooling experimental unit was established. The Longan temperature characteristic curves of forced-air pre-cooling process in different experimental conditions were obtained. The pre-cooling time of Longan was discussed under the influence of different cool-air temperature and flow rate. The test results showed the reasonable air velocity for Longan pre-cooling, which provides foundation and theoretical basis for design of forced-air pre-cooling system.
