摘　　要：文章对肌内脂肪酸的分布与组成以及饲料、添加剂、饲养模式、年龄、性别、加工储藏等影响肌内脂肪酸的因素和主要侯选基因心型脂肪酸结合蛋白、脂肪型脂肪酸结合蛋白、过氧化氢酶体激活增殖受体γ等的研究状况进行了综述。In this review, the distribution and composition of intramuscular fatty acid （IMF Acid） were listed, as well as some factors which affect them. Those factors were given in groups including feed,additives, feeding styles, ages, sex-types, processing styles, storage and so on. As an important part, heart fatty acid-binding protein（H-FABP） gone, adipocyte fatty acid-binding protein（A-FABP） gone and preoxisome proliferator-activated receptor γ（PPAR γ） gone were reviewed in this paper.
