摘  要:提高浓香型优级品率是白酒行业的重要课题和责任。通过夹沙发酵使母糟中的微生物以接种方式入池发酵,达到提高优级品率的目的,既简单可行,效果又明显。经过各种夹沙发酵试验表明,按投粮数20%的优质母糟夹沙,可以提高优级品率5%左右。The improvement of top-grade product rate of Luzhou-flavor liquor is an important challenge for liquor-maklng industry. Sand-entraining could make microbes in maternal fermented grains achieve pit entry fermentation by means of inoculation, which was simple and feasible and had satisfactory effects in the improvement of top-grade product rate. Various sand-entraining fermentation tests suggested that sand-entraining (20 % of the amount of quality maternal fermented grains) could increase top-grade product rate by about 5 %.
