摘 要:对常温下稻米籽粒湿应力裂纹作了理论分析与试验研究。利用动态图像分析等方法,测量并给出了稻米籽粒湿线膨胀系数。研究了湿应力开裂过程并提出了估算水分扩散系数和吸湿深度的方法。初步研究了稻米产生湿应力裂纹时的水分梯度值范围,当在吸湿过程中稻米籽粒内部水分梯度达到6.0~7.5%/mm时,该处应力值达到稻米的抗拉极限强度,发生开裂。During rice processing and storing, one of the important factors to reduce rice quality is wet stress in rice kernel. In this paper, the wet stress cracks in rice kernels were studied under the normal temperature. The dynamic image analysis method was used to measure and obtain linear expansion coefficient of rice. The methods to estimate the moisture diffusivity and the absorption depth were developed for the fissure rice caused by the wet stress. A preliminary research was conduct to determine the range of moisture gradient inside rice kernels when wet stress cracks emerged, which located from 6.0 to 7.5 %/mm.
