摘 要:为了寻找安全、有效的护色剂,以Cu(CH3COO)2和Zn(CH3COO)2的护绿效果为对照,研究了乙醇在枸杞叶罐藏加工中的护绿效果。结果表明,将枸杞叶在93℃的水中烫漂1.5 min后,用体积分数30%乙醇浸泡3h,在罐藏60 d内对枸杞叶有稳定而明显的护绿效果;而用300 mg/kg Cu(CH3COO)2和400 mg/kg Zn(CH3COO)2浸泡3 h对枸杞叶作护绿处理后,在罐藏20 d内的护绿效果较好,但随罐藏期延长,护绿效果减弱。说明乙醇是一种安全、有效的护绿剂。In order to explore safe and effective regents of preserving color, the effect of preserving green of grain alcohol was studied in canned Folium Lycii experimentation compared with that of Cu (CH3COO)2 and Zn(CH3COO)2. The result showed the effect of preserving green was very obvious and steady for canned Folium Lycii by dipping in 30% grain alcohol for 3 hours after scalded in 93℃ hot water for 1.5 minutes during 60 days. Within 20 days,the effect of preserving green is better for canned Folium Lycii by dipping in 300 mg/kg Cu(CH3COO)2 or 400 mg/kg Zn(CH3COO)2 for 3 hours. But the effect of preserving green will be weakened with the prolonging of canned period. Therefore, grain alcohol can be regarded as safe and effective regent of preserving color.
