两株产果香菌株的初步鉴定及香味成分分析

摘　　要：对分离自中国新疆地区土壤中的两株产果香菌株XJB45和XJA58进行了形态、生理生化和分子特征指标的多相鉴定,初步鉴定为白地霉(Geotrichum candidum)。GC/MS分析表明,XJB45和XJA58的产香成分主要为酯类和β-苯乙醇,两株菌产酯能力较强,分别含有15种和16种酯类化合物。XJB45主要产丁酸乙酯、异戊酸乙酯和丙酸丙酯,XJA58主要产异戊酸乙酯、2-甲基-2-丁烯酸乙酯和惕各酸乙酯。此外,培养基对两菌株的产酯能力有明显影响。Two strains producing fruity aroma from soil samples of Xinjiang, in China ,were preliminarily identified as Geotrichum candidum based on polyphase identification. Analysis of GC/MS showed that the main aroma components of XJB45 and XJA58 were esters and beta.-Phenylethyl alcohol,with 15 and 16 kinds of esters, respectively.The relatively high-content esters of XJB45 were Butanoic acid,ethyl ester, Ethyl isovalerate and Propanoic acid,propyl ester while XJA58 were Ethyl isovalerate, Ethyl tiglate and 2-Butenic acid,2-methyl-, ethyl ester. In addition ,ester-producing capability of both strains were markedly influenced by medium type.
