摘 要:实验结果表明,米曲霉培养液对鳕鱼粉具有明显的蛋白酶活性,能将鳕鱼粉中的蛋白质水解;适于米曲霉产蛋白酶的培养条件为初始pH 5.0、培养温度32℃、250 mL三角瓶中装90mL培养基;适于米曲霉产蛋白酶的培养基组成为麸皮4.11 g/L、豆饼粉3.78 g/L、鱼粉1.11g/L;用米曲霉培养液水解鳕鱼粉制备蛋白胨的得率为15.74%.该实验结果为进一步用米曲霉培养液为蛋白酶源,改进鱼蛋白水解工艺提供了试验参考.with the aim to develop a modified process for producing peptone,this paper presented studies on producing peptone by enzymatic hydrolyzing fish meal of Codfish with cultures of Asperigillus oryzae as proteinase source. It was approved by electrophoresis that cultures of Aspergillus oryzae was an efficient proteinase resources and could degrade protein in fish meal of Codfish effectively. It was showed that condition displayed as initial pH 5.0, culture temperature 32℃, and loading 90 mL substrate in 250 mL flask and media composed of 4.11 g/L bran,3.78 g/L bean cake powder and 1.11 g/L fishmeal were suitable for Aspergillus oryzae producing proteinase. The yield of peptone harvested by this method is 15. 74 %. These results provide first experiment materials of enzymatic hydrolyzing fish protein with cultures of Asperillus oryzae for improve process of producing peptone.
