摘 要:目的了解北京市营养午餐现状,引导营养午餐事业向更高层次发展。方法通过现场调查结合访问、座谈、查阅历史资料了解北京市营养午餐现况。结果学生营养餐总体剩余率为29%。主食、面点、肉菜、素菜、汤的剩余率分别为28%、16%、22%、41%、3%,初中学生的的剩余率最高。学生对营养餐的口味满意度较低,对卫生与营养的满意度较高。学校对营养午餐宣传和管理不够,家长、学生对营养午餐的认识和理解都存在误区,学生受到的营养教育不够,不理解营养午餐的价值,挑食偏食现象严重。结论学校在营养教育和营养午餐推广中未起到应有的作用,应通过营养立法,将学校供餐、营养教育都纳入法制化管理,将营养教育纳入学校基本教育,学生营养午餐才能得到较大的发展。Objective To study the current status of school nutritional lunch(SNL)and foster its development.Methods Field investigation in combination with interview and review of historical records were conducted to evluate the current status of SNL in Beijing.Results Overall residual rate of SNL was 29%,with28%,16%,22%,41% and 3% for staple food,wheaten food, meat,vegetable dishes and soup,respectively.Pupils were satisfactory to hygiene and nutrition of SNL,but not so satisfactory to its taste.Publicity and management for SNL were insufficient by schools.There were misunderstandings for SNL in puplis and their parents.Nutritional education for pupils was not enough,so they could not understand the value of SNL and always had a partiality for a particular kind of food.Conclusions Primary and high schools in Beijing did not play a appropriate role in popularization and promotion of nutritional education and SNL.It is suggested that supplies for SNL and nutritional education in primary and high schools should be brought into legal management through nutritional legislation,and nutritional education should be channeled into essential educarion in school to promote greater development of SNL.
