摘 要:以海带为原料,分别采用化学法、酶与化学结合法提取膳食纤维,就影响膳食纤维含量的各因素进行了正交试验,研究确立了提取海带膳食纤维的最佳工艺条件.结果表明,酶与化学结合法提取膳食纤维的产率较高,可达24.7%,颜色为近白色,膳食纤维干基含量达74.5%,可作为功能性食品的膳食纤维添加源.The dietary fiber was extracted from Laminaria Japonica by using chemical method and enzymatic, combined with chemical, method. All kinds of factors affecting the content of cellulose were tested with arthogoral experiment. The optimum conditions for exerating dietary fiber were established. The result showed that the yield of dietary fiber of Larninaria Japonica by the enzymatic, combined with chemical,method was the better. The yield reached 24.7% and the color was nearly white. The dietary fiber contents was 74.5 % and it can be used as additive source of dietary fiber for functional foods.
