摘　　要：以鱼腥草为原料,对鱼腥草营养保健型饮料的生产工艺及配方进行研究,通过正交试验确定该饮料中鱼腥草和苦丁茶水、白砂糖、柠檬酸和稳定剂CMC(羟甲基纤维素)的最佳用量:鱼腥草和苦丁茶混合汁20mL,白砂糖1.2mL,柠檬酸0.6mL,CMC0.4mL,并按照此配方研制出酸甜可口且具有独特风味的鱼腥草营养饮料。In this paper, the production process and formula were studied using houttuynia as the main raw material. Orthogonal experiments were designed to screen the the best dosage of houttuynia-kudingcha water, sugar, citric acid and stabilizers CMC （ earboxymethyl cellulose） in the beverage,i, e. houttuynia-kudingcha 20 mL, sugar 1.2 mL, citric acid 0. 6 mL and CMC 0.4 mL. A nutritional and healthy drink was made from houttuynia with unique flavor and tasting good according to the formul.
