摘　　要：目的分析和探讨消化过程中的规范操作对奶粉蛋白质测定的重要意义。方法对比分析69份奶粉样品经两次不同火力控制的消化处理后其蛋白质的测定结果。结果消化过程中对火力控制的不规范操作可导致平均9.21 g/100g的蛋白质损失。结论消化过程的火力控制对奶粉蛋白质测定影响很大;开展岗位实际操作培训具有重要意义。Objective This study was to explore the importance of standard operation specifically the power control during the milk digest. Methods The protein contents of 69 milk samples have been matched and compared respectively after two different digest processes. Results The nonstandard operation of the power control during the di- gest may cause averagely 9.21g/100g lose of protein in the milk. Conclusion The power control during digest has a great effect on the protein test in milk. The training on the real operation skills for the new workers may be very important in the future.
