摘　　要：益生菌对人体具有保健功效,在乳制品中的应用日趋广泛,但制品中益生菌的存活率很低。微胶囊包埋是保护益生菌免受外界环境侵害的常用方法,综述了益生菌的微胶囊包埋技术及在生产中的应用。Probiotics to have the health care effect tothe human body, in dairy products application day by day widespread, but in the product probiotics the survival percentage to be very low. The microcapsule embedding is the protection probiotics to exempt the external environment violation commonlyused method, summarized has the microcapsule embedding technology and in the production application.
