摘　　要：综述了我国洁蛋生产消费的重要性研究进展，分析了我国洁蛋生产的现状及国外的生产情况，详细介绍了我国带壳鲜蛋清洗、消毒、干燥、分级、涂膜保鲜一系列的加工。The paper describes the research progress of clean egg production and consumption, and analyses the production situation of the clean egg at home and abroad. The series process of cleaning, sterilization, drying, classification, film processing and preservation of the egg shell was introduced in detail.
