摘 要:以小麦中的半纤维素为研究对象,用正交试验法探讨了木聚糖酶降解的工艺条件。结果表明,影响小麦半纤维素的降解因素的主次顺序为(A溶液的料液比)>C(温度)>(B酶的添加量)>D(时间),最优降解条件即溶液的料液比为1∶6,木聚糖酶的添加量为2.0%,作用温度60℃,作用时间75min。在此条件下,与空白样相比,小麦糖浆的过滤速度提高了4倍,还原糖和α-氨基氮的含量也分别提高了8.5%和1.8倍。The technological conditions of degrading hemicellulose of the wheat flour by orthogonal experiment were studied with xylanase. The experimental results showed that the influential extent of affecting factors to degrading hemicellulose of wheat was as follows: A(Substrate concentration) 〉 C(Reaction temperature)〉 B(Enzyme amount)〉 D(Reaction time). The optimal conditions of degrading cellulose.were the ratio of solid to liquid was 1:6 and the addition ofxylanase was 2.0% at the temperature with 60℃ for 75min, Under this condition, compared to the experiment without xylanase, the speed of fihration was 4 times faster, the content of reduction sugar and α-amino nitrogen was 8.5% and 1.8 times higher, respectively.
