摘　　要：羊肉具有极高的营养和保健作用。报道了羊肉酱的加工工艺和产品配方,为羊肉的深加工探讨一条新的加工途径。Mutton has been regarded as high nutrition and health care function. In this paper, the processing technology and ingredient of mutton catsup were reported, it provided a new process of mutton.
