摘　　要：介绍了酶联免疫吸附实验原理,阐述了该技术在食品安全检测中的应用研究进展。讨论了该技术的发展趋势及其应用前景。The technology of Enzyme-linked immunosorbent assay （ELISA） was briefly introduced. Meanwhile, the application of ELISA in analysis of food safety and investrgation progress were commented, including pesticide residue, animal drug residue, food toxins, pathogenic microorganisms and the compositions of genetically modified foods, etc. The development tendency of ELISA and its application prospect were discussed.
